Buttermilk Pancakes - One of the yummiest pancakes there is

There is nothing like starting a morning with the aroma of pancakes wafting around the house. Among quite a few other breakfast dishes, pancakes also form a substantial part in my house. Check out my other Pancakes, one with multigrain including Teff flour and wholemeal Ricotta pancakes . I forgot to post this basic pancake which is one of the most popular of all pancakes and recently only when my friend wanted me to post this, that I even realised that I dint have it here in my blog! Really...How could I have forgotten!

Buttermilk Pancakes
Since this includes all purpose flour, I make this version say once a month. I dont want to leave out the good things in life :) I have tweaked the basic buttermilk pancake recipe to suit my pantry and nutrition. Instead of whole egg, I add two egg whites - leaving out the cholesterol. Instead of refined white sugar, I usually add Demerera sugar which is unrefined and is better for health. I reduced 3 tbsp butter to one - the egg white takes care of the absent butter.

Making it this way, my taste buds dont decipher the "lack" of anything and yet the favourite recipe remains almost the same except for little enhance in nutrition. Here goes.


    Ingredients

  • 1 cup All purpose flour

  • 3 tbsp Demerera sugar (or white sugar)

  • 1/2 tsp Baking Soda

  • 1/2 tsp Baking Powder

  • 1/2 tsp salt (or as per taste)

  • 1-1/2 cups thick buttermilk

  • 2 egg whites (or 1 egg)

  • 1 tbsp butter (optional)

  • 1 tbsp vanilla extract



Method

Add all the dry ingredients together and stir until blended.

Mix the wet ingredients together seperately and stir well.

Add the two (dry and wet) ingredients together v v gently and slowly blend it together. Let them rest for 5-10minutes. Though it is not neccessary, I find that the pancakes turn out to be airer than without.

In a non stick pan, lightly drizzle some vegetable oil (like PAM spray) or use a paper towel to wipe the surface with oil. Make sure the pan is not too hot or too low. Medium heat is perfect for pancakes. Take a 1/4 cup of the batter and drop it in the pan.

You know you are doing it right, when you see the holes/bubbles appearing on the surface and also that it is time to turn. It takes approx 50 second to a minute.

Turn the pancakes when golden brown and let it cook for another few seconds or until done.

Keep them in kitchen towel to make sure that they are warm until you serve them. They are perfect as soon as they are prepared. Hence serve them pronto :) Drizzle maple syrup (a must! Dont even think of skipping it) and feel heaven coming down :)

Blueberry Scones with Sour Cream

What could be more enticing than fresh smelling scones in the morning? Featherlight with a suddden burst of blueberry now and then with each bite - now is there a better way to start a day? Especially if it's a monday? Or how about starting a special day , say like a Valentine day (like today) with something special made by your own hands. I made these in the morning for our breakfast and they dissappeared pretty fast.

I used a pretty basic scone recipe,customized to add in sour cream for the richness and made sure to include a generous helping of blueberries. I love to use blueberry in my cakes and muffins. Shows my luv for them, doesn't it? Next of course I had to post scones. We don't prefer anything too sweet, hence I have added very minimal amount. If you like your scones sweet - add more.

    Ingredients

  • 2 cups all-purpose flour

  • 3 tbsp sugar ( you have sweet tooth? Increase to say, 6tbsp)

  • 2-1/2 tsp baking powder

  • 2/3 cup sour cream

  • 1 cup fresh blueberries (can use frozen too. Dont thaw them)

  • 1 egg

  • 5 tbsp cold butter

  • pinch of salt


Method

Add the dry ingredients together.

Grate the cold butter into it. I do it since it helps me to mix in the butter better and convert into a bread crumb like texture.

Add rest of the ingrediants.It will little sticky, its fine - slowly add in the blueberries.

Place the dough on a floured surface and knead gently until you can roll it out easily

Using a rolling pin, spread it into medium thickness flatbread - expanding about 9-10 inches

Place them on a greased baking sheet

and bake them at 375F for 20-30min until golden brown.Cool them and store in a air tight container.

You can even freeze them and defrost them in m/w when needed.

Wholemeal Banana (Wal)Nut Muffins

I Love using Bananas for Baking as evident from my Low Sugar Banana Muffins and Banana Walnut Bread. I like ti even more with walnuts. For me nothing tastes better than a combination of Banana and Walnuts. That being said, I was amazed to see that I dint have Banana Walnut Muffin posted when I have been making one quite a lot. I find having such treats around help me to avoid reaching for junk foods at the danger time - you know, the time between lunch and dinner. I read somewhere that if this period is not handled right, then thats where one goes bersek with their dieting strategies!

Anyways I have made these Banana Muffins with wheat flour instead of all purpose flour and it has healthy ingredients for a guilt free gluttony :) It is immensely moist with a crunch of generous walnut pieces. I have used minimal fat.


    Ingredients

  • 1/2 cup whole wheat pastry flour

  • 1/2 cup whole wheat flour

  • 2 large bananas

  • 1/8th cup of wheat germ

  • 1/3 cup of brown sugar

  • 1 egg (you can skip this to make it eggless.)

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/4 cup milk

  • 1/2 tsp vanilla extract

  • 1 cup walnuts, chopped

  • 1-1/2 tbsp butter


Method

Add the flour,salt,baking powder, wheat germ together.

Add the wet ingredients together . Mash the bananas with a fork. I do this to get little chunks of banana in my muffin. If you dont prefer that, mash it in a food processor until smooth.

Mix both of them until well incorporated. Blend in some nuts.

Drop spoonfuls of the batter into lined muffin pans.

Top it off with some nuts and bake in a preheated oven 350F for approximately 30-40 min or until done.

Serve warm. Some tea with this muffin would make you feel all the more good about yourself :), the way it does to me.

Onion Tomato Uthappam - South Indian Savoury Pancake

During Breakfast
She: “Honey! What do you want for breakfast? Is idli ok?”
He: “mm..Dint we have Idlis just yesterday? I want toast today…”

Packing Lunch
She: “Would you like me to pack Idlis for your box?”
He: “What..(Sulking!) no..no..They will be cold! Ok Ok your hotbox may help..but I don’t like idlis for lunch!”

Dinner
She: “I feel so tired..What a day! I don’t feel like cooking either…How about Idlis?”
He: “What’s with you and idlis! Never thought you were idlyentric!” [that’s Idli + eccentric = idlyentric for you].
She: (Sign!) “No I am not Idly crazy or something! It’s just that I have lots of idly batter – Just wanted to use it that’s all.”

I am sure this situation would have been “been there and done that” in many of your homes. It’s the same in mine too. Become enthusiastic and grind lots of idly batter and then cope with the family who suddenly become idly phobic. Enter idly clones and you end up making different varieties of tiffin with idly batter – idly fry, idly upma, kuzhi paniyarams,idly roast and ..and..yes Uthappams.Uthappams are South Indian pizzas, or you may call it savory pancakes and are mostly made with leftover Idly batter. They are instant, quick, simple and utterly delicious – of course provided you have the idly batter in hand. But then going by the taste, having leftovers in this case is warranted!:)You want to have some left over idly batter – so you end up making more batter. Any topping of your choice accompanied with spicy chutney’s make the meal.


    Ingredients

  • Left over idly batter

  • 1 onion, chopped finely

  • 1 tomato, chopped finely

  • 2-3 green chilies, thinly sliced (or as per taste)

  • few cilantro sprigs for garnish


Method

1.If you have stored the batter, make sure you bring the batter to room temperature before cooking.

2.In a skillet, greased with approx ¼ tsp oil and rubbed with half sliced onion, pour out 1 ladle of batter in the center.

3.It should be like a pancake, thick and shaped into a circle and then top it with little onion, tomato, chilies and cilantro.

4.After 2-3 min, when done – you will know if you lift it with your spatula easily without it sticking to the bottom- turn it the other side. Cook for another 2-3 min. You can pour about ¼-1/2 tsp of oil if needed around the uthappams.

5.Remove and serve. The aroma that’s wafts is amazing. Serve it with suggested accompaniments.

Apple Bran Muffins - Nutrition powerhouse made eggless

You have had a healthy and simple lunch, you are happy that you ate sensibly, you put a nice blue tick near that particular meal in your "Eat Sensibly Resolution Chart" and feeling mighty pleased about it. Tick, Tock, Tick...the clock ticks away slowly the hand creeping towards 4:00 PM and something else creeps in your belly! Hey is a wild cat nearby? Is someone watching your favourite Animal Planet channel? No..No wait a minute? Is that growl coming from your stomach..yeah it is! Hunger pangs and the tongue starts playing dirty tricks - making you imagine - that Jalapeno chips wonderfully crunch, in your mouth; how about that 'tadak' sound when you bite that nutty chocolate bar, mm...and and how about that delicious looking bagel with a nice filling of cream cheese making eyes with you..........aaaaaaaah!!!!

No, No, you say, looking at your chart!. Then you think of diverting by checking your mails and you get entries for events you are hosting where your fellow foodies are Flaunting .Their . Wares . You start feeling like a dog! No not in a derogatory way..but you so resemble one, salivating this way! You are like OK, THAT's IT and try to grab that Cream cheese bagel - and that's when I say STOP! Here is another yummy alternative which wont make you feel that you are on a diet or something.

Apple Bran Muffins - Eggless

Apple Bran muffins is the way to go - They have that Jalepeno chip like crunch as soon as you bite into it and 2 seconds later, you get a nice chewy texture like that bagel and in the end you feel like you have bitten away the nutty chocolate bar to glory - except that you havent. What you did was eat into a nutrition powerhouse that is so ridiculously low in calories in return of immense benefits that its not even funny! It has a fruit, goodness of wheat and wheat bran, nuts and spices which make blend it all together. Don't go by the appearance - This is one Abraham Lincoln model - The packaging isnt pretty - but whats inside is worth all the time, effort and money :)


    Ingredients

  • 1 apple, grated ( pls dont peel the skin! There are nutrients in there)

  • 1 cup wheat bran

  • 1 cup whole wheat pastry flour

  • 1/4 cup All purpose flour

  • 1 cup milk

  • 1/4 cup pecans ( or walnuts)

  • 2 tbsp brown sugar ( this muffin is v mildly sweet, the way I like it. You can add more if you desire..)

  • 1 tbsp butter

  • 1/4 tsp nutmeg

  • 1/2 tsp cinnamon

  • 1/4 cup applesauce

  • 1/4 cup oil

  • 1/2 tsp vanilla extract

  • 1 tbsp baking powder



Method

1.Preheat Oven to 375F. Mix all the wet ingredients together along with the spices.

2.In a seperate bowl, add all the dry ingredients together.

4.Drop spoonfuls of the dough into a lined muffin pan.

Pongal - Simplest and heartiest soul food ever!

After Idli, the next common dish oft seen at a South Indian breakfast table is Pongal - a savoury pudding made with beautiful combination of lentils and rice tempered with spices and nuts sauted in Ghee. The taste is mind blowing to say the least and filling. It is also one of the simplest dishes to make which does not need constant attention and gets done in matter of minutes - say approx 15min! with nada preparation. This is also called as Ven Pongal (meaning white pongal)/ Khara Pongal (meaning spicy/hot Pongal). This also has a major role to play in the celebration of Indian festival also called as "Pongal"

I make this not just for breakfast but also when I am short on time or when I am not so much in the mood to make anything fancy! Better this than eating out, or use any instant mixes laden with preservatives and god knows what else.

This is also a soul food for me, since it reminds me so much of home :) This is also one of those rare recipes for which not many variations are available. It has few standard ingredients without which one couldnt possibly relate this to Pongal otherwise.:)


    Ingredients

  • 1 cup short grained rice

  • 1/4 + 2tbsp split green gram/moong dal ( I like it with more lentils)

  • salt to taste

    To Temper

  • 1 tsp whole peppercorns

  • 1 tsp cumin seeds

  • 1" inch ginger, peeled and sliced thinly

  • pinch of asafoetida

  • few sprigs of curry leaves

  • few unbroken cashews


Method

1.Wash and clean rice and lentil well until the water runs clear.

Pongal / Ven Pongal / Khara Pongal

Mix them both and add 5 cups of water. Place them in a pressure cooker and cook for 10-15min - or until 3-4 whistles (Indian cookers)

2.Meanwhile in a little ghee, temper first the ginger slices, then add peppercorns and cumin. Saute till aromatic and reddish. In the very end, add curry leaves and asafoetida, stir it for 2-3 seconds and remove with a slotted spoon

3.In the same pan, add the cashews and roast them till reddish color.

4. Now along with salt, add the tempered spice/nut mixture and mix well. Serve hot.

Alternate Method : Cooking using Stove top

I have also witnessed few families using the stove top method to make Pongal. In this method, saute the rice and lentil in little ghee in a pan and when lightly toasted, add salt and water and close the lid. Meanwhile temper the ingredients like above and add it to the rice-lentil mixture just before removing from heat.

Whole Grain Pancakes with Pecan Nuts and Grilled Bananas

The Food Pyramid esp for Vegetarians is little complicated. The need to maintain the essential balance is so crucial - instances like did you take the required amount of Dietery Fibre? what about whole grains? Did your meal the whole day today include sufficient servings of vegetables and fruits? and Oh yes! Proteins? Yes the Pyramid and its classification look simple enough - but in day to day hectic lifestyle, we tend to forget taking each and every thing into consideration and in long run we realise that we have missed out on lots of nutrition and adequate amount of balance much needed esp for Vegetarians.

So, in order to make sure of that aspect, I try to plan ahead all the meals during the week - right from breakfast, lunch, tea time to dinner; making sure to see that I have incorporated all the essential groups in the pyramid. Unless spaced out - its almost impossible to gobble down all the servings in one go - hence the process has to start right from breakfast. Hence this is one of those recipes I came up with - to start off our day on the right note.

I bought a 10grain Bread Mix a while back. It has all the essential whole grains like wheat,rolled oats,Rye,Corn,triticale,millet etc).I also had Teff flour at hand and pancakes are so common in so many households - so made Pancakes out of them.I also wanted to add one fruit and some nuts- so grilled and toasted them resp for the topping. It was light, fluffy, hearty and filled with all the nature's best ingredients.


    Ingredients
  • 1 1/2 cup 10 grain bread mix
  • 1/4 cup Teff flour
  • 1 tsp baking powder
  • 1 egg
  • pinch of salt
  • 2 tbsp demerera sugar/ brown sugar
  • 1 cup low fat milk
  • 1-2 bananas, sliced vertically
  • 2-3 tbsp maple syrup
  • 1/4 cup lightly toasted pecans


Method

1.Mix the flours along with baking powder, salt and sugar. Make a well and then add the eggs and milk and make a thick batter

Mix well and refriegrate for 10 min while you grill the fruit

2.Take the sliced bananas and with a brush lightly apply the maple syrup to the bananas. grill them for a min and set them aside.

3.Take the batter and drop a spoonful on a pan. cook for 2-3 min and turn.

4.Usually it gets done v fast - so make sure not to keep it for very long on the pan.

5.Serve it in a plate hot with a topping of bananas and some nuts - mm may be honey if needed.
