Crunchy and Nutty Oatmeal Cookies

Now I am proud of myself! No I havent climbed Mt Everest or something - Mine is more down to Earth - Ahem More in the Kitchen I should say. Ok - I try to mix and match try some atrocious combos - all in the name of health, variety and mm well experiments! Taking Risk is way of life u know! :) Well before you get too carried away with all this hype and hoopla over nothing lemme come to the point. I made Cookies! Wait! Wait! I usually dont try that much, to incorporate my "brain-waves" when it comes to Baking - since the result has always been a -- lemme put it mildly - a disaster! But some things jus inspire you to try to burn your fingers, hoping that it wont burn you this time like last! And being in Daring Bakers is slowly making me leave my comfort zone - i guess- finally!



Such was Dee's Arusuvai Package that came along. I had already gobbled up her Aam papad and her v v v v v yummy home-made granola ( you got to try it!) was in the risk of going the same way. A fistful with every visit to the kitchen and I knew that it would disappear before I made something out of it. Well I dint want to make anything usually made with cereal/granola -since we are not that much of cereal eaters for Breakfast. So I thought lemme make something for a tea-time snack, something which bursts with taste,smell and energy booster without a lot of fat! And here is it - A very Rustic looking but absolutely out of the world Nutty Oatmeal Cookies . Give it a try - you wont be dissapointed.

Ingredients
3/4 cup low fat margarine ( or butter) at room temp.
1/2 cup sugar ( brown sugar/ splenda would be a good idea )
1 egg white ( this is where all the protein is)
1 cup All purpose Flour
1/2 cup Wheat Germ ( immense benefits here )
1 tsp baking soda
1/2 tsp salt
1 Tbsp Honey
2/3 cup rolled Oats
2/3 cup Dee's Home Made granola / any crunchy cereal
1/2 cup of mixed nuts - if using jus cereal. Dee's had a wonderful mix of hazelnut, cashews and almonds - so I dint use any (optional)

Method


1.Cream the margarine/butter and sugar together until fluffy and light. Add the egg white



2.Sift the flour,soda and salt and then stir into the mixture. Add the wheat germ,oats and granola (and nuts of using) and stir to blend. Chill for at least 30 min



3.Preheat oven 375F. Grease a baking sheet and put spoonfuls of the mixture and spread them out a bit with the help of bottom of the spoon.



4.Bake until golden - approx 10-15min. Cool and then store in air tight container.



These cookies wont win the "looker" prize but they would sure take away the accolades when it comes to taste and nutrition. Special thanks to Dee :) for the inspiration.

Simple and doable changes makes all the difference :)- helping us to stick to our goals without "depriving" ourselves of the good stuff in life! I ean you only live once!
