Dried Blueberry Vol-au-vents

We woman work simply tooo much! Before your brain sirens start firing up thinking I am going to start some woman's lib speech, wait! I am not going to. Its just that for the past few days, I have been coming to terms with that more often than not. Managing a home by itself is quite a task ( Bill payments/ Rents / Snail Mails / Laundry / Cooking and Dirty plates galore! / General cleaning up after our husbands (!!) and I have not yet included Kids amidst this!). And yeah! we strive to cook healthy and balanced meal too ( so grocery shopping too) . If this was not enough, we go and work too. And if at all we feel that we dont do anything for ourselves, we are totally justified and in a split second we go and start a hobby! ( something for ourselves remember? ) only that it soon becomes another TASK!

So many of my hobbies are lying around my house - half finished! And to top it all, one cant even munch on one's fav snacks - thanks to that 'stupid days-bygone-with-all-pounds-intact-still' diet! So what do you do to break this monotonous lifestyle. First 'huff-puff' take a deeeeep breath and then Take out that 'Puff' -Puff Pastry Shells ;-) This Dessert is going to be healthy for you and leave u totally satisfied. take it from me! I am smiling and blogging energetically right now am I not ;-)



Blueberries are one of the most richest Antioxidant carriers and Dried Blueberries tops even that carrying 4 times more than the fresh ones. I have some Dried Whole Blueberries in my freezer which I turn to when I have that itch to munch in my tongue. I wanted a change - wanted to give myself a treat and so made a dessert out of it. I have only approx measures cos I put in ingredients as took my fancy. Make it as per your discretion.

Ingredients

  • 1 pckt Puff Pastry Shells

  • 1 1/2 cup whole dried blueberries

  • 1-2 tbsp brown sugar / Honey ( yes! thats it since dried blueberries are sweet enough. Honey will be a healthier addition.)

  • 1 tsp lemon zest

  • 1 tbsp cornstarch

  • 1 tbsp water

  • 1/2 cup milk

  • 1 tsp Vanilla extract


Method

1.Place the puff pastry shells in an ungresed baking sheet and bake it in a preheated 400F oven.



2. Remove in 15-20min when the shells have all puffed up.



3.Meanwhile place the berries and the other ingredients in a saucepan and stir in med heat. Let the mixture thicken. Cool.



4.Remove the insides of the shells and keep the flakes for garnish.



5.Now fill the shells with the blueberry mixture and take a bite and go to heaven!



This is one luxury which each one of us need to lavish ourselves once in a while. This can be made as healthy or as party fare as needed. I have stuck to healthiest mix since Puff pastry shells have enough calories without us adding few more in the mixture. We can eat without guilt.
