Garlic and Butternut Squash Soup

I have been meaning to make this soup for a long while. Its winter and its not a surprise that almost many have been blessed with an uninvited guest named 'common cold'. We have been no exception and so warm bowl of soup always helps.



I added a fair share of garlic to help relieve the uncommonly red noses. Though it takes a while to cook, the preparation time is not lengthy.

Ingredients

  • 1 butternut squash,peeled,seeds removed and chopped

  • 1 onion

  • 4-5 cloves of medium sized garlic, minced.

  • 1 cup milk

  • 3 cups vegetable stock /water

  • 1 tsp cumin-coriander powder (optional)

  • salt and pepper to taste

  • 1 tbsp butter (Olive oil / Pam Spray is also an option for calorie conscious)


Method

1.Heat a shallow pan, add butter and then saute onions till soft. Add garlic and saute for a min more.



2.Add the squash, sprinkle salt , saute for a min.

Then close the pan with the lid and cook till squash is slightly tender. aprrox 10min.

3.Add 3 cups of water, close the lid and let it come to a boil. Approx 10min.



4.Let it cool slightly and then puree it till creamy.



5.Heat it again and then add milk and cumin-coriander powder along with pepper. Stir it well for another 5 min.



6.Serve it hot with generous sprinkle of pepper. Good one for chasing away the winter blues.
