Cranberry and Apple Pie

I love Lattice top for Pies. They lend a special elegance to the pie which nothing else would. They sure are a delight to behold and a centerpiece attraction at any table.This is a recipe from my cookbook which never fails to bring that special smile onto your lips. A total winner and a definite keeper! And especially more so now that this recipe has been selected among 25 Top Thanksgiving Recipes EVER! by Baking delights in her article for Glam Mag. Thanks Dear :)



The pie was incredible with the fruity taste of Apples and Cranberries. We don’t have a sweet tooth , so I reduced the sugar content of the pie in this case, but for those who have…Its Just for you :) Talking about which, this is my entry for the Garden Cook Event - Cranberries

Ok now to the recipe


    For Pastry

  • 2 1/2 cups all- purpose flour

  • ½ tsp salt

  • 6 tbsp cold butter, cut into pieces ( I reduced this and increased Shortening with water for healthier reasons )

  • ½ cup shortening, cut into pieces ( Thanks to Alton Brown, I used the Crisco All-vegetable shortening which has 0 Trans Fat)

  • 4-8 tbsp cold water


For Filling

  • Grated rind of 1 Orange

  • 3 tbsp Orange juice ( I din’t have Oranges..I used lemons instead )

  • 2 large cooking apples ( I used the green variety )

  • 1 1/3 cups cranberries ( I used almost 2! more the merrier)

  • ½ cup raisins

  • 4 tbsp chopped walnuts

  • Generous 1 cup superfine sugar ( I used ½ )

  • ½ cup dark brown sugar ( I used 1/4 )

  • 1 tbsp flour



Method
1.For the crust, sift the flour and salt.



2.Add the butter and fat and rub well. Stir in enough water to make it into a dough. Divide it into 2 equal balls, wrap and chill for at least 20 min.



3.Put the orange rind and juice in a bowl. Peel and core the apples and grate them into the bowl. Stir in cranberries, raisins, walnuts,sugar,brown sugar and flour.



4.Preheat Oven to 400 F. Roll out one ball of dough about 1/8 inch thick.



5.Tranfer to a 9 –inch pie pan and trim.



6.Spoon the cranberry and apple mixture into the case.



7.Roll out remaining dough to a circle and with a serrated pastry wheel ( I jus used a knife ) to cut into the dough into 10 strips. Place 5 strips horizontally across the top of the tart at 1 inch intervals.



8.Weave in remaining 5 and trim.



9.Sprinkle the top with sugar



10.Bake for 20 min. Reduce the heat to 350 and Bake until crust is golden brown and the filling is bubbling about 15-20 min more.



Tarty Sweet and fruity filling with a flaky and crunchy top :)
