Banarasi Aloo - Rich creamy potatoes with spices and nuts

I have made Aloo Banarasi or Banarasi Aloo, if you will, for as long as I can remember that I dont even recall where I got this recipe from. I make them for parties or when entertaining since I find that this is not the most often made dish yet its so delicious enough to make it to party affair.



It was indeed pretty hard for me to sit down and note down the exact recipe measurements since I have never measured it per se. I always eye ball it, so this was indeed quite a task when I had to actually measure out ingredients while making them. I have given a rough approximation of the measurements hence I would request you to use your discretion and taste to make a choice :) These are yummy and rich and yet not too rich that you would feel too guilty. Now enough talking and lets move to the recipe

    Ingredients

  • 4-5 medium Potatoes, scrubbed,peeled and chopped into large chunks

  • 1 tsp fennel seeds

  • 1 tsp cumin seeds

  • 1 tbsp tamarind paste

  • 1/4 cup tomato puree

  • 1 tsp garam masala

  • 1/4 cup light cream

  • 1 tsp kasuri methi ( dried fenugreek leaves)

  • 2 tbsp broken cashews, toasted

  • 1 tsp cardamom powder

  • salt to taste


Method

1.Bring a saucepan of water to a boil and add the potatoes. Bring water to a boil and then simmer until potatoes are slightly soft. Make sure they dont get too soft enough to break down.



2.Now add fennel, cumin,tamarind paste,turmeic,garam masala,cardamom powder in a tsp of oil. Stir for few seconds and then add the potatoes. Once the spices have coated them well, add the fenugreek leaves. Stir for 2-3 min.



3.Now add rest of the ingredients and mix well to coat the potatoes. Cook for 5 more minutes till the raw smell leaves and then serve hot garnished with some cilantro and cashews.
