Ginger Cookies

I have been meaning to making these goodies for a long while now. But thanks to the persistant demand at work, my extra time was being squeezed dry! Oh well, at long last yesterday was the day when I got an hour for myself and so spent that for baking these.



I got this recipe from one of my American friends whose mother is a wonderful baker. These taste simply too delicious to pass and it would be hard to stop at one. The aroma of the spices during baking is worth 'nosing' about ;-)

Ingredients

  • 2 1/2 cups all purpose flour

  • 1 tsp baking soda

  • 1 1/2 tsp ground ginger

  • 1/4 tsp ground cinnamon

  • 1/4 tsp ground cloves

  • 1 stick butter ( about 1/2 cup at room temperature )

  • 1 1/4 cup sugar

  • 1 egg, beaten

  • 4 tbsp molasses

  • 1 tsp lemon juice


Method

1.Preheat Oven to 350 F. Cream the butter and 1 cup sugar together.



2.Add the egg,molasses and lemon juice and mix well.



3.Now add the sifted flour, baking soda and the spices and mix thouroughly till incorporated.



4.Shape the dough into v small balls approx 3/4 inch balls and roll them in the remaining sugar.



5.Arrange them in a greased baking sheet, placing them about 2 inches apart. This recipes makes about 40-50 cookies.



6.Bake for about 10-15min till the cookies get little firm. Dont wait for it to get more firm ( like a cookie in the Oven since they get firmer once they are cooled). Transfer them to a wire rack to cool and store in air-tight box.
