Dill and Potato Biscuits

My dear friend Siri "kindly" reminded me that I have been slacking off conveniently in updating my RSVP Series and rightfully so (sign). Oh well! Its not that I have not been cooking, it was just that, I was not cooking anything w.r.t my ongoing Series. So I thought I will simulateously start the other series that I had in mind and will keeping adding new ones as and when I cook them :) So today I am starting off with Herbs. They play such an important role in our day to day cooking and therefore are not only essential but also play healthy role in our meals.

Dill has a mild, yet distinctive, aniseed flavor. They go hand in hand esp with veggies like Potatoes,Zucchini and cucumber. They make very good addition to creamy sauces and also can be added to a wide varity of egg dishes. The benefits of Dill includes settling of upset stomach, reducing flatulence, mildly soporific and helps to relieve colic @ Source Vegetarian Cooking Cookbook

Now to the recipe. I had noted down this from the internet long while back and hence dont recall the exact source.

Ingredients

  • 1 cup self raising flour

  • 1 1/2 tbsp butter, at room temperature

  • pinch of salt( u can skip this also)

  • 1 tbsp finely chopped fresh Dill

  • 3/4 cup of mashed potatoes( preferable freshly made)

  • 1-2 tbsp of milk to bind

Method

1.Preheat the oven to 450F.Grease a baking sheet. Sift the flour into a bowl and add the buetter, salt and dill.

2.Mix in the mashed potatoes and enough milk to make into a soft dough

3.Roll out the dough on a well floured surface until fairly thin. Cut into circles. I had some guests coming home who had small kids, so cut them into flower shaped biscuits for them :)

4.PLace them on the baking sheet and bake for 15-20 min or until risen and golden.

Wasnt that quick and simple? They taste yummy on their own, but I served them along with cream of Broccoli soup and they went well together.
