Yday I was all evilly - Jus wanted to indulge in something sinfully rich and delectable. May be its the chill in the wind...may be its the festivity in the air...or may be (am taking an accusatory tone here ) its ALL YOU...oh ya..! So many bloggers..with so many droolworthy pictures jus pulled me to commit that crime and pamper myself ! So i succumbed, but that weighing machine in the corner had its own devilish smile, so I had to do feeble attempts which was not a lot, but sure significant.
I made us some Shahi Paneer with minty cashew sauce along with Naan. Since I already had something rich, I made Whole wheat Garlic Naan enriched with soy flour and I used Low fat milk and Pam Spray to make my side dish...some saving grace it sure was. This is my contribution to Srivalli's M/W Event : Gravies
Method
1. Soak poppy seeds and cashewnut in milk for 15-30 min. Set aside.
2.Once soft grind it along with mint and coriander leaves till smooth.
3.Tranfer to a bowl and then keep on M/W for another 1 minute. Add all the spices and puree and saute it for another 2 minutes.
4.Alternatively heat a non stick pan and spray it generously with PAM. Saute the paneer slices till browned. You cut lots of oil this way. Else you can skip this process completely and jus add the paneer slices in the gravy in the end.
5.Grind the cashew-poppy seed along with milk. It need not be smooth. Cashew pieces here and there does not matter since they add a nice crunch to the gravy.Now add this to our prepared gravy in the bowl. Heat for another 2 min and then add the paneer to the gravy. Heat for 1 min.
6.Taste and season it if reqd. All ready :) The M/W timing is dependent on each type. So use it as per your M/W timing

A rich gravy with cashew...last week i tried one with cashew and almonds..it was great, but unfortunately couldnt take out the snap...

i had recently posted shahi paneer too but i dont use mint and poppy seeds. i think poppy seeds are a great way to make the gravy thick and in a cheaper way than using cashews. thanks for sharing :)

I have a shahi paneer recipe too. But the recipe says to grate paneer. I did it the same way and did not like it very much. Will have to try it your way.

What can i say, the pictures look way too tempting, i was drooling after your pav bhaji and now i seem to have hunger pangs. You do have some nice dishes in your site.
