On Date with Dates Biscuits

I have been v fussy when it came to Dates. My mom used to be always behind my back to make me eat it. I used to be so adamant, but I think responsibility makes things happen. I mean, many things which I dint do, dint feel like doing etc, I do so now after responsibility was thrust on to me - responsibility of marriage, responsibility of making healthy meal for my family. Dates is one such thing which I started incorporating in my diet for the help that it provides to our body.

Some of the factors which made me go for dates are as below :


  1. Dates are a powerhouse in the sense they provide so much energy to our body

  2. For all those with weak heart condition - Dates is the answer.

  3. They are rich in natural fibres

  4. They are known to prevent abdominal cancer and are rich in calcium.

  5. They are good for the eyes and prevent night blindness; so on and so forth


I have tried various recipes with dates..and Dates Biscuit from my cookbook is one innovative one which is but is not similar to the usual american biscuits that we get here in the US.
They are sweet in a savoury sort of way, They are crunchy yet soft! Confusing ain't I..? Try it and see...Date biscuits are my entry for Akshayapatra's AFAM event : Dates







Ingredients

  • 2 cups self-rising flour ( You can add 2 tbsp of wheat bran for health! and reduce 2 tbsp of the flour.I have tried it.It still tastes good )

  • pinch of salt

  • 4 tbsp butter

  • 1/4 cup sugar

  • 1/3 cup chopped dates

  • 2/3 cup milk ( I have always used reduced fat milk )

  • some melted butter to glaze ( U can use 1 beaten egg too..or skip it altogether)





Method>

1.Preheat Oven to 450F. Sift the flour and salt into a bowl.



2.Rub in the butter till it resembles bread crumbs.

3.Add sugar and chopped dates and stir to blend

.Make a well in the center of the dry ingredients and add the milk.



4.Mix it till it becomes a soft dough.



5.Turn the dough onto a lightly floured surface and v gently knead it for 30 seconds.



6.Roll it into 3/4 inch thickness

and cut out circles.



7.Arrange them,not touching, on an ungreased baking sheet, and glaze it with butter/egg. Bake in the oven for 8-10min or until well risen and golden brown and transfer them on a wire rack to cool.



8.Tada..Its ready for munching! :) easy right...Under 30 min! :)
