I am totally finicky when it comes to eating Broccoli! Nothing new , you might say, but then for a person who self proclaims to eat and make healthy food often enough, passing up Broccoli is just not it! Sigh! I know few ppl who like it enough to add it in their upma's and kitchidi's. Whoa! Hats off to them. It really took me lots of combo's and additons and deletions to make Broccoli likable to my palate, which it soon did, thank God.
Among many recipes that I did try with broccoli one of them which made my face become less of a crumpled mess ( which it turns to when I have to eat it ) was one from my cookbook - Broccoli and Chestnut Terrine and that which am sending to Tami's Event : Terrines. I have adapted it in few ways for my own purposes. Its simple, healthy and as usual quick.

Method
1.Preheat oven tp 350F. Line a loaf pan with wax paper and grease it with PAM spray.
2.Blanch or steam broccoli for 3-4 min, until just tender.
3. Drain well.
Reserve one-fourth of the smallest florets and chop the rest finely.
4.In a large bowl, mix together the chestnuts,bread crumbs,yogurt and cheese. Season with salt and pepper.
5. Gradually add in the chopped broccoli, reserved broccoli along with the milk.
Mix well.
6.Spoon the mixture
into the prepared pan.
7.Place in a roasting pan and pour in boiling water.
8. The boiling water should come half way up the sides of the loaf pan. Bake for 20-25 min.
9. Remove the terrine out onto a plate.
10. Cut into slices
and serve.
Very simple and v v v v healthy. What do u say?
