I often tease my husband saying that he has a first wife called 'protein' ; so particular is he about his daily protein intake.! Jokes apart - This made me do lots of research on protein and look for resources which give immense protein since our daily vegetarian diet is not sufficient to provide this. In my search, i got introduced to Soy products and subsequently to Tempeh(<-- click for more info ).
Hey! wait..wait dont go..It is Vegetarian ! I know it luks more like brain of something Blech! ( oops with due respect to non-veggies. NO offence meant!) I had the very same reaction when I first set my eyes on it and almost dint buy !
Anyways Back to tempeh! Although Tempeh is not equivalent to Tofu for its calcium, iron and B Vitamins, it is more healthier thanks to its capacity to boost the immune system and help fight body of its harmful toxins. I guess , enough of my non-stop extolment of Tempeh; time to get back to the recipe! I came across this recipe in a book and it has been a regular in my home.
Method
1. Grind lemongrass,garlic, spring onions,onions,chilies,ginger and corainder leaves together until it becomes a coarse paste
2. Add tempeh,lemon juice and sugar and blend until combined.
3. Add the flour and salt and pepper , stir till combined.
4. Take a heap of the mixture and shape into patties ( or any shape u desire )
5. Heat Oil and shallow fry the patties till golden brown.
Here I have to mention, that when I go healthy I tend to go overboard. I wanted to avoid the Oil, so instead, i used PAM spray on my non stick pan and placed the patties in a circle and turned them when one side was done. Yup the taste does differ, but the difference is too mild to take notice in the face of it being v healthy and oil free :) but then Its my way, you can shallow fry.
